One of my favorite things about summer is the farm fresh produce. Last week I was needing to make some salsa, so when I saw this beautiful bounty I grabbed it and ran home to get chopping. In fact, I was so excited to make this that I ended up cutting my finger while cutting a tomato! I recovered and got back on task. Chop a few things, toss them together, give it a quick stir and you’re ready for the chips. So when you’re at the farmer’s market this week, pick up a few things and throw together this quick salsa.
Ingredients
8-10 ROMA TOMATOES, seeds removed and chopped*
1/2 ONION, finely chopped
1 JALAPENO, seeds removed and finely chopped
1 BANANA PEPPER, seeds removed and finely chopped
3 cloves of GARLIC, finely chopped
1/3 bunch of CILANTRO, chopped
Juice of 2 LIMES
SALT, to taste
Combine all ingredients. Serve with chips.
*Use ONLY Roma or Plum tomatoes to make this. You can easily remove the seeds by cutting off one end and gently squeezing the seeds out into a bowl.
Add to the above – 2 peaches, peeled and chopped
Don’t knock this one until you try it, it’s not as weird as you might think. It’s an interesting twist!
