Okay, we are now well into summer and as the temps climb to over 100 degrees with the heat index in our neighborhood, you can bet we are looking for a cool summer treat. After recently reading on another blog that you could make frozen banana custard using just a frozen banana, I decided to get creative and try other frozen fruits to make ICE CREAM. Be creative with this and you can come up with a lot of great varieties.
Raspberry Sorbet with Chocolate Chips
1 cup frozen raspberries
1 T. chocolate chips
honey or agave nectar to taste
Place frozen raspberries in food processor. Blend until a smooth consistency. Taste. If it is too tart for your taste add a little honey or agave nectar to sweeten slightly. Stir in chocolate chips. Serve.
This idea can be used for several different fruits. The best part is you get the taste of ice cream or sorbet but the calories of a cup of fruit. Try without the chocolate for even fewer calories. We recently tried strawberries too and they made a great decadent dessert.
Last night we had my in-laws over for dinner and decided to go for a banana split version. Food process one frozen banana until smooth. Add 1 T. chocolate syrup. Serve topped with fresh strawberries.
