Once again, I would like to remind you that HARVEST TIME is in full swing. We are enjoying the cooler days and having soup for supper.
Most recipes with PUMPKIN in the title have a tendency to catch my eye. It’s one of my favorite ingredients…so easy to work with, nutritious and delicious.
We were recently at a local orchard where they had a section of recipes you could grab to take with you to enjoy the fresh produce you were buying there. That’s where I found this.
It is simple and makes your house smell wonderful. You just need time for it to heat on the stove top. If you are like me, always looking for something new to add variety to your breakfast, when something easy comes along…you make is as soon as you can.
Ingredients
1 can (15 oz.) PURE PUMPKIN
1 cup APPLE CIDER (or Simply Apple Juice)
3/4 tsp. PUMPKIN PIE SPICE
1/2 tsp. CINNAMON
1 medium APPLE, peeled, cored and grated
1/2 cup packed BROWN SUGAR
Combine all ingredients in a medium saucepan.
Bring to a boil, reduce heat to low.
Cook, stirring every so often, for 1 1/2 to 2 hours.
Puree with immersion blender. (optional)*
Put in a glass or plastic container that has a good air tight lid.
Store in refrigerator for up to 2 months.
Serve with biscuits, toast, english muffins or pancakes.

*I chose to puree the mixture because I preferred not to have the apple pieces visible in the butter.
