APPLES ARE EVERYWHERE, which is one of the wonderful things about this time of year.
They are delicious, plentiful and a whole lot of fun to pick. Whether or not you pick them yourselves, this is a great thing to make with them.
I saw this recipe at Life as MOM. She took the traditional apple pie and made a 9 x 13 version, which is a lot more portable than trying to take and serve pie! I’ve made it twice in the last week, for two different groups of people and it got rave reviews.
Crust*:
1 cup FLOUR
1/2 cup BUTTER, cut into chunks
1/2 teaspoon SALT
1-2 Tablespoons COLD WATER
Filling:
6 APPLES, peeled, cored and sliced
1/2 cup SUGAR
1 Tablespoon LEMON JUICE
1 Tablespoon CINNAMON
Crumb Topping:
1 cup FLOUR
1/2 cup BUTTER
1/2 cup BROWN SUGAR
1/2 cup CHOPPED NUTS*
Preheat oven to 375°.
Prepare crust – in a medium bowl, combine flour, 1/2 cup butter and salt with a pastry blender or two knives. Work these ingredients together until they form pea-sized crumbs. Quickly stir in cold water and combine until dough forms. Press into the bottom of a 9 x 13 pan.
In a large mixing bowl, combine apple slices, sugar, lemon juice and cinnamon. Spread in an even layer over crust.
Combine topping ingredients using a food processor or a pastry blender to make the crumbs. Stir in nuts. Sprinkle crumb topping over apple layer.
Bake for 45-60 minutes or until filling bubbles.
Cool completely.
*In a pinch, you could easily use a store bought refrigerated pie crust and cut it to fit in the 9 x 13 pan, pressing the seams together.
*The second time I made it, I didn’t have nuts and it turned out fine. So I think they are optional.
