Once again, I have found a recipe from the June 2010 issue of Everyday Food! I think it has been my most used issue so far. This recipe is for stuffed jalapenos and is a great appetizer for your next game day get together. It is simple to assemble and only takes about 12 minutes in the oven. The peppers stay crunchy and the cheesy filling gets nice and smooth. And don’t let the name fool you, these really aren’t that spicy because the seeds have been removed.
STUFFED JALAPENOS

Ingredients
-6 large JALAPENOS
-4 oz CREAM CHEESE
-1/2 cup shredded SHARP CHEDDAR CHEESE
-SALT and PEPPER
Directions
After washing, cut the jalapenos in half lengthwise and remove all the seeds. In a small bowl mix the cream cheese, sharp cheddar cheese, salt, and pepper. Fill each pepper with about 1 Tablespoon of cheese filling. Bake at 475 degrees for approximately 12 minutes or until cheese is brown and bubbling.
