Mini Pumpkin Pies

I hope that you’re not tired of pumpkin because I have yet another recipe for a fantastic little pumpkin treat.  I came across the recipe for these a couple of years ago and have loved them ever since.  In fact, pretty much every one that has tried them has given them rave reviews, and the kids…they gobble them up!  And they can even help make them.
Exciting News Alert:  Today’s recipe is PRINTABLE!!!  I hope that you’re as excited as I am.  We will have printable recipes from here on out and will be working to make our past recipes printable as well.
Mini Pumpkin Pies
Printable Recipe Here
1 cup PUMPKIN PUREE
1/2 cup SUGAR
1/2 cup MILK
1 EGG
1 teaspoon VANILLA
1 small (3.5 oz.) box VANILLA INSTANT PUDDING MIX
3/4 teaspoon CINNAMON
1/4 teaspoon GROUND GINGER
1/4 teaspoon GROUND CLOVES
1 PASTRY for a double-crust pie
Preheat oven to 350°.
In a large bowl, beat together pumpkin, sugar, milk, egg and vanilla.
Add the pudding mix, beat until well blended.
Stir in spices.  Set aside.
Roll out the pastry dough on a well-floured surface.  Use a biscuit cutter to cut circles out of crust.

Put each circle into the bottom of a muffin tin.  Press down slightly to fit in pan.

Use filling to fill crusts evenly.  I used my 1 Tablespoon cookie scoop, it was the perfect amount.  I used a spoon to spread them evenly in the crust. 

Bake for 30 minutes.  Don’t over bake or they become rubbery.  Cool on rack.

Serve with sweetened whipped cream and a dash of cinnamon (optional).

Store in fridge in between layers of waxed paper.  These can also be frozen and thawed out before serving.

Not that I would know much about that, they never last very long at our house.  I may have had one, or two, for breakfast the other day.  That’s how hard they are to resist!

*I used a 3″ biscuit cutter and ended up with 30 mini pies.  That used all of the filling, but not all of the second crust.  The kids had a great time playing with the scraps of what was left of the crust.

    Oooh, I can’t wait to make these for Thanksgiving! I was just talking with my mother in law about what pumpkin dessert I could make. Who doesn’t love mini-finger food versions of desserts? And they seem like great portions for all my diabetic elders.
