{Easy No-Fail} Peanut Butter Fudge

Back in my college days, which seems so weird to say but it has been a few years, I was introduced to making fudge around the holidays.  I guess I’d never really paid that much attention to it growing up, but now it had my attention. 
I really like it all…chocolate, chocolate with nuts, rocky road, cookies and cream, peanut butter….mmmmm, peanut butter is one of my favorites and I end up making it for my mother-in-law every year since she loves it too.
There are many recipes for your basic chocolate fudge, one of the more popular may be Fantasy Fudge which can be found on the back of the marshmallow creme jar.  It’s the classic chocolate with nuts combo.  Yum!
Last year I came across this recipe for the peanut butter version and it’s super easy and has turned out great every time that I have made it. 
 
 {Easy No-Fail} Peanut Butter Fudge

1 cup BUTTER
1 cup PEANUT BUTTER
2 cups POWDERED SUGAR, sifted
1/3 cup CHOPPED PEANUTS (optional)
Line an 8×8 baking dish with foil, leave about 2 inches hanging over the edge.  Lightly spray with cooking spray.
Place the butter and peanut butter in a medium-size microwave safe bowl and microwave on HIGH for 2 minutes.
Remove and stir with a spoon.  Return to the microwave and cook on HIGH for another 2 minutes.
Add in the powdered sugar and stir vigorously until combined and smooth.
Mix in the chopped nuts, if using.
Cool to room temperature, then chill until firm.
Pull the fudge from the pan using the foil overhanging edges.  Cut into small squares.
*Use ONLY butter, no substitutes. 
*Use a good quality peanut butter.
*Make sure to sift the powdered sugar first or you will have small lumps in your fudge.
