So, the other day I was doing some hair at a family friend’s house. She was making something that smelled delicious. I asked her what was in it and it sounded like a fairly ‘reasonable eats’ to me. Then, of course, I had to try it and it was just as good as I thought it would be.
It’s a veggie & chicken quiche. I’m not sure if I’ve ever tried quiche or not, but this was wonderful.
Here’s what you need:
2 cups cooked chicken breast, chopped
1 1/2 cups broccoli florets, chopped
3/4 cup carrots, shredded or chopped
1/2 cup red bell peppers, chopped
2 1/2 cups shredded Swiss cheese (I would probably use a shredded colby jack instead)
9 eggs
1/2 cup heavy whipping cream
1 teaspoon Sea salt
1/4 teaspoon black pepper
1/4 teaspoon ground nutmeg
1/2 cup sliced almonds (optional)
Preheat oven to 325 degrees. Spread cooked chicken, broccoli, carrots and bell peppers evenly over bottom of sprayed 9×13 pan. Top with cheese. Beat remaining ingredients together, except almonds, and pour evenly over mixture. Bake 40-50 minutes. Top with almonds. If you’d like to spice it up a bit, I’d use some tabasco. Serves 6-8 people.
