Today is Valentine’s Day…a day when people everywhere declare their love for each other. While I enjoy Valentine’s Day, I also think it’s important to show your love for others often and in many different ways. I love my family and it brings me a lot of joy to make things that they enjoy eating. So when, a couple of weeks ago, my husband requested that I make his favorite (read: the only cake he will eat because he doesn’t really like cake) cake – I did.
This cake is almost unbelievable! It’s incredibly moist (thanks to the buttermilk!) and the frosting is divine! This is the cake that I used to make these cake pops last August. The recipe is simple, all you need to make the cake is a big bowl and hand mixer. The frosting takes a few minutes to make, but the results are so worth it.
If you know a German Chocolate Cake lover…they will adore you any day that you decide to take the time to make this cake for them!
GERMAN CHOCOLATE CAKE
CAKE:
3 cups FLOUR
2 cups SUGAR
1/3 cup COCOA POWDER
1 cup OIL
2 EGGS
1 cup BUTTERMILK
1 cup HOT TAP WATER
2 teaspoons BAKING SODA
1 teaspoon SALT
1 teaspoon VANILLA
Preheat oven to 350°. Grease and flour pans.
Put all ingredients in a large bowl. Mix with hand mixer until well mixed.
Divide batter evenly among prepared pans. Tap the pans lightly on the counter to release any air bubbles.
Bake 25 minutes or until toothpick tests clean in center of cake. Cool completely before frosting.
FROSTING:
1 cup EVAPORATED MILK
1 cup SUGAR
3 EGG YOLKS
1/4 cup BUTTER
1 teaspoon VANILLA
1 1/4 cups COCONUT
1 cup CHOPPED PECANS
In a heavy bottomed saucepan, whisk together milk and egg yolks. Add sugar and butter, whisk until blended.
Cook over medium heat, stirring constantly for about 12 minutes or until thickened.
Stir in coconut, vanilla and nuts. Spread over cooled cake.
