One of the favorite foods at my house is Mexican food. I love all of the different flavors and the different ways you can create Mexican food. I was glancing through a cookbook that was made for a fundraiser and came across this recipe. Like it said in the title, it was easy and looked delicious. I hope you enjoy these as much as we did. This recipe could easily be doubled and you could really get creative with the toppings that you put on them after they baked.
Easy Taco Packets
4 small boneless, skinless chicken breasts
4 tsp. taco seasoning
2 cups red potatoes, diced
3/4 cup chunky salsa
1 cup Mexican style cheese
4 square sheets heavy duty foil
Toppings: sour cream, extra salsa, black beans, jalapenos, etc.
Preheat oven to 400 degrees. Sprinkle chicken with taco seasoning. Place 1/2 cup potatoes on the center of each sheet of foil. Top evenly with chicken, salsa and cheese. Bring up foil sides. Double fold top and both ends to seal each packet. Place in large baking pan. Bake 30-40 minutes or until chicken is throughly cooked. Remove from oven and let stand for 5 minutes. Cut slits in foil to release steam before opening. Serve with sour cream and additional toppings of your choice.
