I will be honest and tell you that I am terrible at making side dishes! It is one of the things that I struggle most with. In college I never made a side for just myself when cooking and even being married I find that a lot of the side dishes make more than I need, so it doesn’t always seem worth it. And on top of all of that my husband tends to be a picky vegetable eater! BUT… Asparagus is one vegetable that my husband actually requests and loves!
Like most fruits and vegetables, asparagus is the best when it is fresh and in season! Luckily for us, that season is now and we are really enjoying it! We have grilled it in the past, either on the grill outdoors or in a grill pan on the stove, but in this recipe you can bake it and it turns out wonderfully! This asparagus would go wonderfully with Baked Tilapia or Grilled Pork Loin Filet.

GARLIC BALSAMIC ASPARAGUS
Ingredients
1 lb. ASPARAGUS
1 Tablespoon OLIVE OIL
1 Tablespoon BALSAMIC VINEGAR
1/2 teaspoon KOSHER SALT
1/4 teaspoon FRESHLY GROUND BLACK PEPPER
1 teaspoon MINCED GARLIC
Directions
Preheat oven to 425 degrees. Wash asparagus and then remove the bottom couple of inches of each stalk. In a small bowl, combine salt, pepper, oil, vinegar, and garlic. Drizzle over asparagus and toss to coat. Place in a roasting pan (I actually used a Corelle baking dish). Drizzle any remaining oil/vinegar mix over the asparagus. Roast for 10 minutes, turning once. Serve Immediately.
