Hello Crumbs and Chaos blog readers! I’m Brooke, from Waiting to Rise. We are participating in the Ultimate Blog Swap today and I wanted to share with ya’ll a wonderful recipe for lemon poppy seed waffles.
I have this tradition of making waffles on Wednesday mornings before work. I look forward to my “Waffle Wednesdays”, as they are a chance for me to actually test out new waffle recipes that are quick, healthy, and delicious!
Today’s version takes an old standard, Bisquick, and jazzes it up with some lemon zest, lemon juice, and poppy seeds. Here are the ingredients you will need:
water, sugar, lemon, poppy seeds, 2 6oz containers of fat free lemon yogurt (I used Yoplait), Bisquick (you can either use the original mix or the Heart Smart). First things first, preheat your waffle iron and zest your lemon.
“Old Faithful”…my first waffle maker…its been through alot and I’ve loved every minute of it!
I used a microplane grater and zested the entire lemon. Make sure you don’t zest to the white part, the pith of the lemon…too bitter. And these waffles are springy and light…not bitter!
You will measure out 2 cups Bisquick, 2 tablespoons sugar, and 1 tablespoon poppy seeds in a medium sized mixing bowl. Whisk gently to mix all dry ingredients together.
Next, add your wet ingredients to dry ingredients: 1 cup water, the zest of one whole lemon, and the juice of one lemon. Mix until just incorporated.

Take a soup ladle of batter onto hot waffle iron. I spray mine with non-stick cooking spray before I put batter on the iron to be doubly sure I avoid sticking. Close and wait 3-5 minutes until cooked through and puffed up golden brown (this depends on what type of waffle iron you have and how hot you have the heat settings…I like mine on the halfway hash mark and I know its done when the green light clicks on).
To serve, I took a dollop of the lemon yogurt and placed it in the center. I sprinkled the waffles with dried cranberries and served the extra yogurt on the side. It was a wonderfully filling and fun spring breakfast.
Note: You can serve with regular butter and syrup if your family prefers…I’ve just been watching what I eat (it is bathing suit season here in SC)…while still enjoying the things I loved! This was a hit in my house and I know it will be in yours too! Let me know if you have any questions!
