Peanut Butter Cup Cookies

I was recently looking for a dessert recipe that was small and easy for kids to eat for our play group!  These turned out perfect and they were easy to make.   Everyone loved the bite sized cookie!  
When searching for recipes I always look for recipes that don’t have too many ingredients or at least a lot of ingredients that I don’t have.  I also look for easy instructions and I like to get recipes from the online sites that provide viewers comments so you can learn from what other people have tried.    This helps me to decide whether the recipe is worth making and also if there was something that didn’t work out so well I might adjust the recipe when I make it.

Peanut Butter Cup Cookies

1 3/4 cup flour
1/2 teaspoon salt
1 teaspoon baking soda
1/2 cup butter, softened
1/2 cup white sugar
1/2 cup peanut butter
1/2 cup brown sugar, packed
1 egg, beaten
1 teaspoon vanilla extract
2 tablespoons milk
40 miniature peanut butter cups, unwrapped
Preheat oven to 375 degrees.  Sift together flour, salt and baking soda; set aside.
Cream together butter, sugar, peanut butter, and brown sugar until fluffy.  Beat in egg, vanilla and milk.   Add flour mixture, mix well.  Shape into 40 balls and place into an ungreased mini muffin pan.  
Bake at 375 for 8 minutes.  Remove from oven and immediately press a peanut butter cup into each ball. Cool completely and carefully remove from the pan. 
Note:  These will not look done after 8 minutes but they are.  After reading many reviews on this recipe, I learned that they don’t look done but they are and you don’t want to over bake them.
