Raise your hand if you love a fresh, warm cookie with milk?
I’m raising both of mine! Cookies are one of my favorite sweet treats, easy to make, portable, freezable – they have plenty of great qualities. My absolute favorite recipe for the notorious chocolate chip cookie is this Brown Sugar Chocolate Chip Cookie, they never disappoint! I’m always on the look out for any other really great cookie.
Awhile back when I saw the recipe for these cookies, it shot to the top of my ‘must make list’. I love the texture of this cookie which comes from the corn flakes and quick oats. It’s wonderful and delicious. This recipe makes a load, so there will be plenty to share!
COWBOY COOKIES
1 cup BUTTER, softened
1 cup BROWN SUGAR, packed
1 cup SUGAR
1 Tablespoon MILK
1 1/2 teaspoons VANILLA EXTRACT
2 EGGS
1 cup CRUSHED CORN FLAKES
2 1/2 cups QUICK OATS
1 1/2 cups FLOUR
1 1/2 teaspoons BAKING SODA
1 teaspoon SALT
1 cup SHREDDED COCONUT
1 cup CHOPPED WALNUTS (optional)
1 1/2 cups CHOCOLATE CHIPS
Preheat oven to 350°.
Cream butter and sugars until light and fluffy. Add the milk, vanilla and eggs and beat well.
Stir in the corn flake crumbs and oatmeal. Add the flour, baking soda and salt, mix well. Stir in the coconut, walnuts (if using) and chocolate chips.
Place tablespoon-sized balls of dough on a lightly greased or lined cookie sheet and bake for 10-12 minutes until lightly golden around the edges.
