Is it breakfast? Is it a dessert? Is it a snack? I think all could be true for this delicious granola. I recently found this recipe in the “Fix It and Forget It Kids’ Cookbook. I love including Jack in the kitchen. It is a great activity for him and I think kitchen skills are so valuable for all of us. Most of this recipe is measure and pour in. Plus, you make it in the crock pot so it is easy for the kids to help stir while it is cooking.
I will include the full recipe but when I made it I just put in what I had on hand so I omitted the raisins and sunflower seeds and added extra of the other ingredients. You could definitely add any of your favorite ingredients.
Enjoy sprinkled on yogurt or I might have tried this sprinkled on some vanilla ice cream with a few chocolate chips.
Peanut Butter Granola
6 cups dry oatmeal
1/2 cup wheat germ
1/2 cup toasted coconut
1/2 cup sunflower seeds
1/2 cup raisins
1 cup butter
1 cup peanut butter
1 cup brown sugar
Mix the dry ingredients together with a wooden spoon in a large slow cooker.
Place butter, peanut butter and brown sugar in a medium-sized microwave-safe glass bowl. Cover.
Microwave on high for 1 minute or until the mixture is melted. Add to the oatmeal mixture in the slow cooker. Mix well.
Cover the slow cooker. Cook on low 1 1/2 hours. Stir every 15 minutes or so.
Pour the granola onto a cookie sheet lined with wax paper so that it can cool.
When the granola is cool, break into chunks and store in an airtight container.
