One of our favorite summertime treats is a gooey chocolately s’more! It isn’t usually what I think of when trying to decided what is for dinner, but the other night the two ideas merged. We frequently have breakfast for dinner and it was one of those nights. Pancakes were on the menu and when I searched the baking cabinet for chocolate chips, the marshmallows were staring right at me. So I decided to experiment. I am happy to say that it went deliciously well!

Ingredients
1 cup PANCAKE MIX*
3/4 cup WATER*
3 GRAHAM CRACKERS, crushed to a fine powder
1/4 cup CHOCOLATE CHIPS
1/4 cup MINI MARSHMALLOWS
Directions
Mix pancake mix and water as directed on package. Stir in graham cracker powder, chocolate chips, and marshmallows. Using a 1/8 cup measuring cup, scoop batter and pour on a hot griddle or pan. When the batter bubbles, flip pancake and continue cooking until golden brown. Serve with honey or syrup. ENJOY!
*These measurements are based on the specific pancake mix I was using, to make 5-7 pancakes. You should follow the batter directions on the mix that you are using. If you are making more pancakes you may need to adjust the amount of the mix-ins.
