If you have been reading this blog for any amount of time, you know that we love recipes that are simple and that our families love to eat. With all the chaos in our lives, dinner time needs to be easy and it is so much better when the kids love it, too. This is a recipe that I inherited from my husband’s family. They loved it growing up and we make it often, too. We also love that there are usually leftovers for lunch the next day. I have also been using this recipe to take to new families from our church when they have had a baby. I prepare it but I don’t bake it. They can bake it that night or they can save it in the fridge for a few days until they need it. It has been a big hit!
Taco Casserole
1 1/2 lb. ground beef
1 pkg. taco seasoning
1 can refried beans
1 tube crescent rolls
1 pkg. Taco chips, crushed (We use Doritos but I have used the nacho flavored ones, too)
2 cups shredded cheddar cheese
Sour Cream & Salsa
Brown meat. Drain. Mix seasoning with as directed. Add beans. Simmer for 15 minutes. Spread rolls in bottom of 9×13 pan. Pour meat mixture over rolls. Sprinkle with cheddar cheese. Spread chips over the top. Bake at 350 degrees for 40 minutes. Serve with salsa and sour cream.
