Brownies with Salted Caramel Icing in a Jar

Last week was my boss’ birthday and I was looking for a treat that I could make her that was special enough, but also didn’t take a long time or make a huge quantity. A few months ago I saw for the first time, things baked in jars. There was cake and monkey bread and cheesecake. But when I saw the recipe for Brownies in a jar topped with Salted Caramel Icing, I knew it was the one! It is a rich sweet and somewhat salty treat. Baking it in a jar makes it seems so special. If you have lids for your jars it is the perfect way to take it to go or save it for the next day.

The original recipe used a homemade brownie recipe, I wanted to save on time so I bought a mix at the store and made per the directions. I think you could use the One Bowl Brownies (which would probably make only 4 jars) or your favorite recipe as well. Using a box mix, this made about 6 jars when cooked. While it was delicious, it was VERY rich and definitely more than a serving. When I do this again, will probably try to find 4 oz jars instead of 6 oz. Plus, that way every bite gets frosting!

Dark Chocolate Brownies with Caramel Icing in a Jar

Ingredients
1 box DARK CHOCOLATE BROWNIE MIX – 9×13 size (or the ingredients for your favorite brownies)
EGG, OIL, WATER (according to package)
1/4 cup SUGAR
2 tablespoons WATER
1/4 cup HEAVY CREAM
1 teaspoon VANILLA
1 1/2 sticks UNSALTED BUTTER, softened
1 teaspoon KOSHER SALT
1 cup POWDERED SUGAR
6 – 6oz JELLY JARS (or 8 – 4oz jars)

Directions

Preheat oven to 350 degrees. Mix brownies according to package directions. Pour the batter into the jars and fill until they’re approximately half full. Place all jars on a cookie sheet and bake 20-25 minutes or until knife comes out clean when poked in the center. Allow to cool completely before frosting.

For the frosting, combine the sugar and water in a small saucepan. Bring it to a boil and cook it, without stirring until it turns a dark amber. About 7 minutes. Once it darkens turn off the heat and remove the pan from the stovetop. Stir in the heavy cream and vanilla very carefully, stirring well even as it bubbles. Then allow it to cool completely. While the caramel is cooling beat the butter and salt until smooth and creamy. Then add the confectioners’ sugar and beat until well incorporated. Turn off the mixer and pour in the caramel and beat everything until it is light and fluffy. 

Frost brownies and top with a few chocolate chips. ENJOY!
