If you have been reading for a while, you know that soup is one of my favorite things! Last year I posted Cream Cheese Potato Soup, the Black Bean and Salsa Soup, and the Zuppa Toscana. Well this year is no different! Once the temperature started to drop I had soup on the brain! Last Sunday was a perfectly rainy and chilly day to stay in side and make soup! I got the recipe for this Broccoli Cheddar Soup from the October 2011 issue of Food Network Magazine.
To me a Broccoli Cheddar Soup is a cheese soup base with broccoli added. This soup uses sweet potatoes and white potatoes as the base and then adds the broccoli and cheddar. Which is the reason I changed the name to Broccoli Cheddar Potato Soup. But either way, it was a fantastic soup, especially paired with homemade croutons. It was one that the whole family loved!
BROCCOLI CHEDDAR POTATO SOUP
Ingredients
2 Tablespoons OLIVE OIL
1 medium ONION, finely chopped
2 stalks CELERY, finely chopped
2 cups CHICKEN BROTH
2 cups HALF & HALF
1 lb RUSSET POTATOES, peeled and chopped
1 lb SWEET POTATOES, peeled and chopped
2 cups BROCCOLI FLORETS, chopped
1 1/3 cups SHARP CHEDDAR CHEESE
KOSHER SALT & GROUND PEPPER
CROUTONS, for topping
Directions
Heat the olive oil in a large pot over medium-high heat. Add the onion and celery and cook, stirring until softened, about 5 minutes. Add the broth, half & half, all potatoes, 2 cups water, 1 teaspoon salt, 1/4 teaspoon pepper and bring to a boil.
Reduce the heat to medium low and simmer until the potatoes are tender, about 10 minutes. Meanwhile, put the broccoli in a microwave-safe bowl; add 3 tablespoons water and season with salt. Cover with plastic wrap and microwave until crisp-tender, about 4 minutes; drain.
When the potatoes are tender, either transfer soup to a blender to puree or use an immersion blender in the pot to puree, thinning with water if needed. Return to a simmer over medium-low heat; stir in the broccoli and season with salt and pepper.
Add the cheese and stir until melted. Ladle the soup into bowls and top with croutons, if desired. ENJOY!!
