When looking for a quick and easy breakfast, I came across scones. I have had some really good scones before but never considered making them. After reading a post on Simple Bites, I found it to be a very interesting idea. My favorite part was that she said they are an essential item to have in your freezer. Do the work and clean up one day, then enjoy them any day of the week without having to get up early or mess up the kitchen. Instantly the house smells amazing, and within minutes you have a warm breakfast.
The original recipe is for Basic Cream Scones. Then you can essentially use any add in. I had dried cherries (the Ocean Spray brand) and mini chocolate chips. SO… those were my add ins. It really is an experiment to find the perfect amount of add ins. I think if I did the same combination again, I would add more cherries. Other options that sound really good to me are orange cranberry or white chocolate raspberry! For now those are on my to-do list……
Cherry Chocolate Scones

Ingredients
- 2 1/2 cups FLOUR
- 1/2 teaspoon SALT
- 3 teaspoons BAKING POWDER
- 1/2 cup BUTTER, cold, cubed
- 2 EGGS
- 1/2 cup HALF AND HALF
- 2 Tablespoons SUGAR
- 1/4 cup DRIED CHERRIES
- 1/4 cup MINI CHOCOLATE CHIPS
Instructions
Sift together flour, salt, and baking powder. With a pastry cutter, cut in butter until the butter is roughly pea-sized.
In a small bowl, beat eggs until foamy. Add cream and sugar and beat well. Combine wet ingredients with the dry and fold gently to combine. Stir as little as possible. Add in your desired ‘extras’.
Using your hands, gather the dough into a rough ball and place on a floured counter top. Pat into a disc about 3/4 inch thick. Cut into triangles with a sharp knife or make shapes with a cookie cutter.
Place in an airtight container or plastic bag, label, and freeze OR bake at 450°F for 10 minutes. Serve warm.
To bake from freezing: Preheat oven to 425°F. Place frozen scones on baking tray and bake 12-16 minutes, or until sightly golden. Baking time will vary according to size of scones.
