Tortellini Soup

Ingredients (serves 2)
- 1 quart chicken stock
- 1 16 oz. bag tortellini, dried or fresh
- 1 bunch spinach
- Zest of 1 lemon
- Grated parmesan cheese (I just bought a bag of shredded parmesan)
In a medium pot, bring stock to boil over medium high heat.
Add the tortellini to the pot and cook according to the package directions.
During the last 30 seconds of cooking time, add the spinach and lemon zest.
Season with salt and pepper. Serve with grated parmesan cheese.

I love the fact that this only had 5 ingredients, but, next time I make this I think I’m going to add some sausage or hamburger meat to it.
