The easiest and most flavorful chicken I’ve ever made in a crock pot – Cafe Rio Chicken is the perfect filling for tacos, enchiladas and burritos!

It’s February already?!  How can that be?  Well, happy February to you all.  We have a few crockpot recipes lined up for you throughout this fabulous month.  It’s definitely time to put that quiet, little kitchen appliance to work.
I adore all of the flavors of Mexican food, which is why this recipe caught my eye.  It was amazing and could be used for so many different meals – tacos, burritos, nachos, burrito bowls or quesadillas.  I loved this because it wasn’t a spend-all-day-in-the-crockpot meal, it was ready in 4 hours.  It’s a smaller quantity so it fits great in a 3 quart crockpot
.
We enjoyed this in tacos made with corn tortillas and topped with cheese, avocado, cilantro, green onions, sour cream, shredded cabbage and hot sauce.  To me that is heaven on a plate!

(Crockpot) Cafe Rio Chicken

Ingredients

  • 2 lbs. CHICKEN BREAST
  • 1 cup ZESTY ITALIAN DRESSING
  • 1/2 Tablespoon MINCED GARLIC
  • 1 packet RANCH DRESSING MIX
  • 1/2 cup WATER
  • 1/2 Tablespoon GROUND CUMIN
  • 1/2 Tablespoon CHILI POWDER

Instructions

  1. Place all ingredients in the crockpot.
  2. Cook on low for 7-8 hours or high 3-4 hours.
  3. Shred and serve how ever you like - as filling for tacos, burritos, nachos, quesadillas or burrito bowls, etc.
  4. It is easy to double or triple this recipe and freeze the extras.
