This month my assignment was Cafe Lynnylu. Lynne’s blog is full of two of her favorite things – stunning photography and delicious recipes. Trying to decide what to make was nearly impossible, I had nearly a whole notebook page full of options – Citrus Chile Shrimp, Queso Fundido, Caramel Vanilla Bean Ice Cream, Grilled Bread with Mediterranean Chopped Salad. And the list went on.
I love pizza and Mexican food, so I ended up deciding on Southwestern Pizza. This was the way to go. Lynne’s recipe includes the homemade crust recipe that she uses, my local Meijer store has a fabulous frozen pizza dough so I used that instead. I also added chicken because I had it on hand, but this would be just as delicious without it. And for the record, avocado on pizza is AMAZING!
This pizza came together quickly and we loved it. Thanks, Lynne, for introducing me to such a fabulous new pizza!
Southwestern Chicken Pizza

Ingredients (2 large or 4 small pizzas)
- 2 (1 lb.) portions of FROZEN PIZZA DOUGH, thawed (or make your own)
Sauce:
- 1 (14.5 oz.) can DICED TOMATOES
- 1/2 cup CHUNKY SALSA
- 1 GARLIC CLOVE, minced or crushed
- 1 teaspoon ONION POWDER
- 1 Tablespoon FRESH CILANTRO, chopped
- 1/4 teaspoon GROUND CUMIN
- 1/4 teaspoon BLACK PEPPER
- 1/4 teaspoon SALT
Toppings:
- 2 small AVOCADOS (or 1 large), thinly sliced
- 1 cup SOUR CREAM
- 1 cup COOKED & CUBED CHICKEN
- 8 oz. SHREDDED CHEESE (Pepper Jack, Monterrey Jack)
- SLICED JALAPENOS
Instructions
Preheat oven and pizza stone to 450°.
On a cornmeal dusted pizza peel or parchment paper lined pizza peel, roll out pizza dough to fit your pizza stone.
Top with 1/2 of sauce mixture, spread 1/2 cup of sour cream on top of sauce, layer on 1/2 of avocado and 1/2 cup of chicken, top with 1 cup of shredded cheese and sliced jalapenos.
Slide onto preheated pizza stone, bake for 12-14 minutes.
Repeat with 2nd crust and the remaining toppings.
Cut into slices and serve.

I love the flavours on this pizza. One thing I’d never have thought of putting on pizza is avocado as I’ve never eaten it cooked before but it must add a lovely creaminess.
