Who doesn’t remember having an oatmeal cream pie as a child? It has always been one of my favorite Little Debbie snacks. I always ate around the outside and saved the middle bite (with the most cream!) for last! So… when I saw a recipe for this homemade treat I couldn’t wait to try it!
The goal of course is getting it thin enough that the cookie to cream ratio is correct. While also have a chewy texture. This recipe was wonderful and accomplished both goals! I had to practice a lot of self-control so that I didn’t eat them all in one day. Luckily they were wonderful the next day… and even the next. We will DEFINITELY be making these again!
OATMEAL CREAM PIES
Ingredients
- 1 cup BUTTER
- 3/4 cup DARK BROWN SUGAR
- 1/2 cup SUGAR
- 1 Tablespoon MOLASSES
- 1 teaspoon VANILLA
- 2 EGGS
- 1 3/4 cups FLOUR
- 1/2 teaspoon SALT
- 1 teaspoon BAKING SODA
- 1/8 teaspoon CINNAMON
- 1 1/2 cups OUICK OATS
- 2 teaspoon VERY HOT WATER
- 1/4 teaspoon SALT
- 1 (7 ounce) jar MARSHMALLOW CREAM
- 1/2 cup SHORTENING
- 1/2 cup POWDERED SUGAR
- 1 teaspoon VANILLA

Instructions
- Combine flour, salt, baking soda, and cinnamon in a bowl. In large mixing bowl, cream butter and sugars. Add in eggs, beating after each. Finally beat in molasses and vanilla. Add to the flour mixture to creamed mixture and beat until just blended; mix in the oats with a wooden spoon.
- Drop dough by tablespoons (keep in mind they will spread out) on parchment lined sheets, with plenty of space in between. Bake at 350 degrees for about 10 minutes, or until just starting to brown around the edges. Careful not to overbake, they will look moist. Let sit on cookie sheet for about 5 minutes and then transfer to wire racks to cool completely.
- While the cookies bake make the cream. In small bowl, dissolve the salt in the hot water. Set aside and allow to cool. Combine cream ingredients and mix on high until fluffy, about 3-4 minutes. Add the cooled salt water and mix well. Spread on cooled cookie and top with another! Makes about 18 pies.
