I was thrilled this month to be introduced to the blog Big Fat Baker, mainly because I have a serious sweet tooth! Erin started blogging because she enjoys cooking and baking and loves sharing recipes that are approachable and easy enough for any day of the week. (I think we could definitely be friends!)
There were so many delightful options…grapefruit cake, caramel pear ice cream, dulce de leche shortbread cookies, toasted coconut ice cream, dulce de leche coconut tart…the list could go on and on. It was love at first sight when I spied this Strawberry Lime Tart…I couldn’t stop thinking about it. I must confess that some months I sort of procrastinate my SRC post, I work better under pressure (*wink**). Anyhow, I needed to make this one ASAP.
When I was at Walmart one evening, these sweet little jars jumped into my cart begging me to take them home. I couldn’t refuse and I’m so glad I did. I made the tarts in them – super adorable. These are perfect to take on the go (lunch box or picnic), or when you want a little portion control, ummm…that’s if you can only eat just one. And the lime curd…don’t get me started – I agree with Erin it’s extremely dangerous, as in you need to make it on a day where you have to leave the house so you don’t catch yourself walking by the jar of it as it’s cooling taking a taste here and there. Really though, this dessert is a must try in a jar or in a tart pan – don’t miss it!
Strawberry Lime Tarts in a Jar
Ingredients
- 9 WHOLE GRAHAM CRACKERS
- 1/3 cup SUGAR
- 6 Tablespoons MELTED BUTTER
- 1/2 cup BUTTER
- 3/4 cup SUGAR
- 1/2 cup FRESH SQUEEZED LIME JUICE
- 1 Tablespoon LIME ZEST
- Pinch of SALT
- 5 EGG YOLKS
- Sliced STRAWBERRIES
- WHIPPED CREAM

To Make the Tarts:
Instructions
- Preheat oven to 350°. Place 12 4-oz. jelly jars on a baking sheet.
- In a food processor, pulse graham crackers into crumbs. Add sugar and melted butter, pulse a few more times to combine well. Place 2 Tablespoons of crust mixture into the bottom of each jar, press down gently. (I had some of this crust mixture left over.)
- Bake for 6-8 minutes. Remove from oven, allow to cool completely.
- In a small saucepan over medium heat, melt butter. Remove from heat. Whisk in sugar, lime juice, zest and salt.
- Whisk in egg yolks and return to low heat, stirring constantly. Gradually increase heat, keep whisking.
- Cook until it thickens enough to coat the back of a spoon (between 10-12 minutes). Remove from heat, allow to cool. It will thicken up more after you chill it.
- When you are ready to prepare the tarts, put 1 1/2 tablespoons of curd in each jar. You can do this step ahead of time. Right before serving, top with sliced strawberries and whipped cream. Then try to eat just one tart in a jar...nearly impossible!
