I feel like I’m a guest blogger…since it’s been a while since I’ve posted!!! 😉 But, I got this great new Trader Joe’s Cookbook that I’m pretty excited about.  I bought all the ingredients for this recipe at Trader Joe’s, but, if you don’t live near one you can buy this all at your local grocery store.  My sister and her husband were over the other night so I thought I’d make an appetizer for everyone.  These turned out delicious!
Crab on Cucumber Boats

Ingredients (8 servings)
- 1 lb. refrigerated LUMP CRAB MEAT
- 1 ENGLISH CUCUMBER
- 3 Tablespoons FRESH LIME JUICE
- 2 Tablespoons CHOPPED FRESH DILL
- 2 Tablespoons CHOPPED FRESH CHIVES
- SALT & PEPPER
Instructions
Slice the cucumber into 24 diagonal slices.
Combine remaining ingredients, season with salt and pepper to taste. If making ahead of time, refrigerate separately.
Top each cucumber slice with a spoonful of crab meat mixture and serve immediately.
