Oh how I wish I had a garden right now. I am hoping next year we will be able to have a garden since we will have a perfect backyard for it. I have several friends that have gardens and the tomatoes are always very abundant. This is an awesome time of year to eat the best produce. This simple mixture of cucumbers, tomatoes and onions is great as a side dish when you want something fresh. Grill up a couple of burgers or some chicken and serve along side. I love how this is made in a mason jar. Something about mason jars that makes food even more appealing. You could use a covered dish of any kind if you do not have a mason jar.
Marinated Cucumbers and Tomatoes

Ingredients
- 1L mason jar
- 1 ripe tomato or 1 cup cherry tomatoes
- 1 medium cucmber
- 1 small onion
- 1 Tablespoon dill
- 1/2 cup vinegar
- 1 teaspoon salt
- 1/2 teaspoon honey
- 2 Tablespoons olive oil
Instructions
Dice tomato and place 1/2 in jar.
Dice onion and place 1/2 in jar.
Dice cucumber and place 1/2 in jar.
Whisk together all other ingredients in a small bowl for the marinade.
Layer the tomatoes, onions and cucumber a second time and pour marinade over the top.
Close lid and flip to distribute the marinade.
Place in fridge for 2 hours or more before eating.
