Eggnog Bundt Cake with Eggnog Buttercream

Holiday treats…gotta love this time of year.  This delectable cake will be a sure hit at your next gathering!  As you can see my frosting was melting off because I was not patient enough to wait for it to cool completely.  I like the taste of eggnog but usually can’t drink a whole glass of it because it is so rich. So this cake was the perfect combo.  I am lucky enough to have a couple of friends who love to taste test my recipes and they gave this one a thumbs up!

Eggnog Bundt Cake with Eggnog Buttercream

Ingredients

  • 2 sticks unsalted butter, room temp
  • 2 cups granulated sugar
  • 3 large eggs, room temp
  • 3 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon kosher salt
  • 1 cup eggnog
  • 1/4 eggnog flavoring or 1 teaspoon vanilla extract
  • Buttercream:
  • 2 sticks unsalted butter, room temp
  • 4 cups powdered sugar
  • 1/2 cup eggnog
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350F. Butter and flour a 10-inch bundt pan and set aside.
  2. In a small bow mix together the flour, baking powder and salt and whisk together. Set aside.
  3. Beat the butter and sugar until light and fluffy, about 3 minutes. Add eggs one at a time, beating after each addition until completely incorporated.
  4. With the mixer on low add in the dry ingredients, alternating with the eggnog until the batter is completely smooth.
  5. Bake for 45-55 minutes or until cake tester comes out clean.
  6. Allow the cake to cool in the pan for 10 minutes. Then overturn the cake pan on wire rack and allow to cool completely.
  7. To make buttercream: Beat the butter until very creamy. Beat in the sugar, eggnog, and flavorings until completely smooth. Frost the cake and enjoy!
