I think sometimes we feel like really good food has to be complicated or take a long time to put together. Don’t get me wrong – there are some awesome meals that are worth the time it takes to put them together (on occasion). But I’m learning to love the ways that fresh and simple can really go hand in hand. As I’ve mentioned before, I love getting together with friends – it’s encouraging and good for the soul. And what’s a good get together without some good eats? Not very much fun, that’s for sure.
Triscuit Crackers have come on the scene with a few new varieties that are sure to be well received at your next get together. Triscuit has taken the ‘woven style’ wheat crackers that you know and love and spiced them up a bit. There are 5 new flavors that include real ingredients like brown rice, sweet potatoes and red beans. Enjoy these bold new Triscuit crackers in place of ordinary crackers, bread or chips to serve with your favorite appetizers.

Today I’m sharing a quick and flavorful appetizer that comes together in minutes and is perfect for enjoying with friends or eating as a snack any day of the week. We loved this with the Triscuit Tomato & Sweet Basil Crackers. These crackers are sturdy enough to hold all of the caprese goodness you can put on them and they’re also great for dipping!
Caprese Topped Triscuit Crackers

1 cup CHERRY TOMATOES, quartered
2 oz. FRESH MOZZARELLA, diced

Stir together basil, tomatoes and mozzarella. Season to taste with salt and pepper, drizzle with olive oil and stir again. Serve immediately with your favorite Triscuit crackers.
