Perfect for snacking – Mini Pumpkin Chocolate Chip Muffins are an all-time family favorite!
First off, I apologize for letting the summer suck the regular posting schedule right out of this little blog. It’s tricky to juggle working from home and keeping life exciting for 4 kids. Throw in an oven that’s gone out twice in the last month and working on a few freelance recipes, I’ve been short on time and creative inspiration. Thankfully, the oven situation is now under control and I was happy to welcome it to our house by making our family’s favorite muffins.
One thing I won’t apologize for is the fact that my love for pumpkin knows no season. Seriously, I posted a picture of an open can of pumpkin puree over the weekend and a friend commented ‘What?! It’s still summer!’ I’m aware of that, but I STILL FREAKIN’ LOVE PUMPKIN! Is anybody with me?
This recipe is one that I’ve been making since before the blog began. I originally posted it the end of August 2010, but I’m posting it again today with updated pictures and so you can save or print it from Ziplist. We really love these muffins, I mean really. My kids go crazy for them, friends and family make the recipe often (probably mostly in the fall 🙂 ), these muffins have the perfect balance of spice, sweet and, of course, chocolate. And they’re snack-sized and freeze beautifully. So, for pumpkin lovers everywhere…
Perfect for breakfast or snacking, these mini muffins are full of pumpkin flavor and studded with mini chocolate chips.
Ingredients
- 1 3/4 cups FLOUR
- 1/2 cup WHITE SUGAR
- 1/2 cup BROWN SUGAR, packed
- 1 teaspoon GROUND CINNAMON
- 1/2 teaspoon GROUND GINGER
- 1/2 teaspoon GROUND NUTMEG
- Pinch of GROUND CLOVES (optional)
- 1 teaspoon BAKING SODA
- 1/4 teaspoon BAKING POWDER
- 1/2 teaspoon SALT
- 2 EGGS
- 2 teaspoons VANILLA
- 1/2 cup BUTTER, MELTED
- 1 cup CANNED PUMPKIN PUREE
- 1/2 cup MINI SEMI-SWEET CHOCOLATE CHIPS
Instructions
- Preheat oven to 350 degrees. Grease mini muffin pans.
- In a medium bowl, sift first 10 ingredients - doing this helps make sure there aren't any big chunks of spices.
- In another bowl, whisk eggs, vanilla and melted butter until well blended; mix in pumpkin puree until combined.
- Mix in the dry ingredients to the pumpkin mixture until blended. Stir in chocolate chips.
- Spoon batter into muffin tins, filling about 3/4 full. I use my small cookie scoop for this - it's about 1 Tablespoon of batter.
- Bake for 9-10 minutes or until muffins test done.
Notes
*These freeze well, if you ever have any left. *You can leave out the chocolate chips if you want.

Great recipe! I have these twice. The first time I accidentally forgot the brown sugar, so I poured a little maple syrup over them while they were still warm, and they were delicious.
