This was my first year to participate in The Great Food Blogger Cookie Swap. What fun! It was like Christmas morning, waiting in anticipation to see what I would receive. The cookies that were sent to me were – Double Chocolate Sandwich Cookies with White Chocolate Ganache from Ausra at Children and Vanilla, Chinese Five Spice Almond Cookies from Connie at Urban Bakes and Almond Snow Cookies from Wanda at My Sweet Zepol. Let’s talk about these Peppermint Chocolate Chipster Cookies that I sent to my matches – LeAndra from Love and Flour, Ashley from Savvy Table and Trudy from Chocolate Castles. Ummmm, absolutely amazing. They FULL of peppermint flavor and studded with chocolate chips, not to mention the extra peppermint that you add to the top and melt just a bit. Seriously, these are my kid’s new favorite cookie. And I have a feeling they are a permanent addition to our list of holiday treats.
There’s an extra step or two from your usual cookie making, but they aren’t difficult steps and the kids can help with some of it, like rolling the dough into balls, pressing the balls flat with the glass or sprinkling the just baked cookies with crushed peppermint. These cookies freeze beautifully, so they’re easy to make ahead of time and take out of the freezer when you’re heading out the door to that holiday party 🙂
The recipe for these Peppermint Chocolate Chipster Cookies is a few simple steps that yield delicious crowd pleasing results!
Ingredients
- 1 1/2 cups MINI CHOCOLATE CHIPS
- 1 cup CRUSHED PEPPERMINT CANDIES or CANDY CANES
- 1 3/4 cups FLOUR
- 1/2 cup minus 1 Tablespoon unsweetened COCOA POWDER
- 1 teaspoon BAKING POWDER
- 3/4 cup UNSALTED BUTTER, room temperature
- 2 1/2 Tablespoons VEGETABLE OIL
- 3/4 cup SUGAR
- 1 EGG
- Scant 1/2 teaspoon SALT
- 1 1/2 teaspoons VANILLA EXTRACT
Instructions
- Preheat oven to 350 degrees. Line baking sheets with Silpat non stick mats or foil (lightly grease the foil).
- Place 3/4 cup of the mini chocolate chips, 1/3 cup peppermint candy pieces, flour, cocoa powder and baking powder in the bowl of a food processor. Pulse on and off until candy and chocolate is in fine pieces and everything is well combined.
- In a mixing bowl, beat together butter, oil and sugar on medium speed until light and fluffy. Add in the egg, salt and vanilla and continue beating until well smooth. Gently beat in the flour mixture and then stir in the other 3/4 cup mini chocolate chips.
- Scoop dough using a 1 Tablespoon size cookie scoop, placing about 12 cookies on a baking sheet. Use a large, flat-bottom glass that has been dipped in water to gently press the dough into 2 inch circles.
- Bake in the upper third of the oven for 8-10 minutes. Remove from the oven and sprinkle with some of the remaining crushed candies. Use the same glass (only lightly greased this time) or the bottom of a metal measuring cup to gently press the candies into the cookies. Return to the oven for 2 more minutes.
- Remove from the oven and allow to sit 4 minutes on the cookies sheet and place on a wire rack to cool completely.
- Store in an airtight container or freeze.
Notes
*I found a package of already crushed peppermint candies in the holiday baking aisle at Walmart, so that's what I used for these cookies instead of crushing my own.
*The original recipe calls for Dutch-process cocoa powder, the second time I made these I ran out of it and used regular cocoa powder and they turned out just fine.
