This quick dinner recipe for Fire Roasted Tomato and Basil Pasta is brought to you by GE Appliances.
On a recent visit to my sister’s house, during which we enjoyed plenty of meals and sweet treats, we threw together a quick pasta bar for dinner one night. We chose that type of meal because it can be tailored to everyone’s different preferences, it doesn’t take long to make and it includes bread and butter (and it’s no secret we’re carb lovers around here!). I suggested using chicken sausage because it’s become a recent favorite of mine, comes already cooked and is really flavorful.

My inspiration for this 30 minute meal was the pasta bar that we set up that evening. While you’re boiling the pasta water, you’re also heating together a few ingredients in a saucepan to make a quick sauce while the veggies cook and the chicken sausage heats in the oven. Toss it all together and serve with salad and a side of bread and you’re all set!

- 8 oz. PASTA NOODLES
- 4 oz. CREAM CHEESE
- 1 14.5 oz. can FIRE ROASTED TOMATOES (regular or garlic), undrained
- 1 teaspoon DRIED BASIL
- 2-3 GARLIC CLOVES, minced or crushed
- ¼ teaspoon SALT
- 2 small ZUCCHINI, sliced into half moons
- 8 oz. MUSHROOMS, quartered
- 1 pkg. CHICKEN SAUSAGE, sliced
- Boil water for pasta and cook according to package directions.
- Preheat oven to 425 degrees. Line a baking sheet with foil. Spread veggies and chicken sausage out on pan. Drizzle veggies with a bit of olive oil. Bake for 10-12 minutes.
- In a small sauce pan, heat cream cheese, tomatoes, basil, garlic and salt over low heat until combined.
- After pasta is finished cooking, drain and return to pan. Add sausage and veggies. Pour in sauce and toss together. Serve immediately.
