- 1½ cups FRESH TOMATOES, cut into bite sized pieces
- 4 slices CRISP COOKED BACON, coarsely chopped
- ½ cup MOZZARELLA PEARLS or CUBED MOZZARELLA CHEESE
- 4 teaspoon EXTRA VIRGIN OLIVE OIL
- ½ cup FRESH BASIL LEAVES, chopped
- ½ teaspoon CRUSHED GARLIC
- SALT & PEPPER
- Place tomatoes, bacon and cheese in a bowl. Add olive oil, basil and crushed garlic. Gently stir together and season to taste with salt and pepper. Serve immediately.
