There are somethings that really make the holidays complete for me. Aside from things such as spending time with family, putting up the tree, and listening to Christmas music (bonus if it’s O Holy Night because that’s my fave!). I also have foods and flavors (as you may remember my story about pumpkin pie at Thanksgiving!) some more of those flavors included eggnog and cranberries. They aren’t hugely popular flavors and are usually either loved or hated. For me, I need them just at the holidays and then I’m good the rest of the year. Usually the cranberries are eaten in the form of cranberry sauce but when I recently saw these sugared cranberries I knew my cranberry eatin’ days had taken a turn for the better!!!
They are really easy (although slightly time consuming) and the sweet/tart combo you have at the end is ridiculously addicting. They are also a wonderful way to add a splash of color to any holiday party this year. I would definitely encourage you to try them if you are a cranberry lover. And even if you aren’t, they may surprise you! Either way, I hope that this week of holiday celebrations is full of love, laughter, and your favorite food and flavors. - 12-ounce bag fresh cranberries
- 1 cup granulated sugar
- 1 cup water
- additional sugar for rolling
- Wash cranberries and toss any damaged ones. Place in a bowl. Combine 1 cup of sugar and water in a pot and heat until simmering. Stir until sugar is dissolved and let cool until warm. Pour over cranberries and let sit. The longer they sit the less tart they will be. They can sit up to overnight.
- Use a slotted spoon to remove berries from syrup. Set berries on a cooling rack that is placed over foil to collect drips. Spread berries out so they are not touching each other. Let dry for 1 hour.
- Roll berries a handful at a time in sugar. Place sugared berries on a baking sheet, or foil, etc. and let dry for an hour or two.
- Store in a shallow container container at room temperature. The more they move and touch, the more sugar will fall off. ENJOY!!
