Spring is in the air and the season is ripe with possibilities. This season brings daffodils and leisurely weekend breakfasts with family and friends. One thing I could never live without is breakfast. My love for this particular meal time runs deep, whether it’s breakfast time or brunch. Sometimes our Thursday evening dinner group enjoys quiche, coffee cake or our favorite french toast bake when we make breakfast for dinner.
Using puff pastry as the crust for a breakfast pizza is an easy way to upgrade this simple dish. After pre-baking the crust for a short time, we’re adding a flavorful Asiago cheese, crispy bacon pieces and eggs. The eggs cook perfectly in the oven while the cheese melts and the crust finishes cooking. Before serving, garnish with sliced green onions for color and zest.
