Happy New Year! It’s the first Monday in January, which means copious amounts of coffee will probably be necessary to make it through the day…I know I stayed up far too late watching the {final} season premiere of Downton Abbey. Anyhow, I’m ready to start the new year with a little balance. The balance of more thoughtful meals and snacks because the holidays are known for sabotaging that idea in every way. We don’t make a ton of smoothies at our house and I’m not sure why. They are filling, nutritious and refreshing. And there aren’t too many rules…use what you have on hand, experiment with your favorite flavors and have a big straw on hand. Sounds easy, right?
I found myself with leftover pineapple the other night and I decided to put it in the freezer to make smoothies another day. Adding pure vanilla extract to your smoothie adds a delightful flavor twist without any added sugar. I might be obsessed with this flavor combo…sweet pineapple and banana married with vanilla and orange. Total yum.

- ½ cup VANILLA YOGURT (I used whole milk, use what you have on hand)
- 1 FROZEN BANANA, sliced into chunks
- 1 cup FROZEN PINEAPPLE
- ½ cup ORANGE JUICE (feel free to substitute your liquid of choice)
- 1 teaspoon PURE VANILLA EXTRACT
- Place all ingredients in a blender.
- Blend until smooth. Add more liquid if you'd like a thinner consistency.
- Serve immediately.
