It’s time for a filling breakfast that’s quick to make and not short on sweet, caramel flavor. Caramel Almond Oatmeal is the perfect pair for your morning coffee and some fresh fruit.
I am not exaggerating when I say that there are about 4 different kinds of oatmeal in my cupboard at this very moment. My kids prefer the quick cooking kind, my husband likes regular rolled oats and I like them all, but steel cut oats are one of my faves depending on my mood. Oatmeal is so versatile, you can switch up the flavors and add-ins and taste something different every time. When I’m having a rushed morning, I like to put my hot oatmeal in a coffee cup and take it to go…it’s perfectly portable that way.

Silk Creamers are free from dairy, lactose, gluten, casein, egg and peanuts…which pretty much means they can be enjoyed by just about everyone. You know I’m a fan of using flavored creamers when making muffins, french toast and desserts, well this time I’ve added it to my morning bowl of oatmeal and it’s a sweet way to start the day!
To Make Caramel Almond Oatmeal:
I usually make oatmeal on the stove top. I stir together the liquids and the oatmeal at the same time rather than waiting for things to come to a boil first. Don’t forget the little pinch of salt – salt is a flavor enhancer and helps add balance to the final dish. You can add a tablespoon of ground flax after its done cooking if you like, it makes things a little thicker and adds to the overall nuttiness factor. I found the creamer to add enough sweetness, so I didn’t need any additional sweetener. If you do, add it after it’s done cooking. I always add a splash of something creamy to my oatmeal, so I added a bit more creamer before diving in 🙂

- ¾ cup WATER
- ¼ cup SILK ALMOND CREAMER, caramel flavor
- ½ cup REGULAR OATMEAL
- Pinch of SALT
- 1 Tablespoon GROUND FLAX (optional)
- SLIVERED or CHOPPED ALMONDS for topping
- In a saucepan, bring water, creamer, oatmeal and salt to a boil. Stir and turn to low, cook about 3-4 minutes until thickened.
- Remove from heat and stir in ground flax if using. Transfer to a bowl and top with slivered almonds and a splash or two of Silk Almond Creamer.
- Serve immediately.
