I know that we showed you the Quick & Easy Thai Chicken Salad earlier this week, but here is another Asian dish that I just couldn’t resist. It’s sweet, it’s spicy, and it’s reminiscent of the lettuce wraps that I have had at places like P.F. Changs!
The most time consuming part of this recipe is getting all of the little parts together. In reality it is a very simple recipe that tastes like it requires more work than it does. It could be served as an appetizer before serving Chicken Fried Rice or Thai Peanut Noodles. Or you could serve it like we did, along side brown rice as a fulfilling entree.
Sweet & Spicy Chicken Lettuce Wraps
Ingredients
- 3 Tablespoons DRY ROASTED PEANUTS, unsalted and roughly chopped
- 3 Tablespoons HOISIN SAUCE
- 2 Tablespoons CIDER VINEGAR
- 2 teaspoons SOY SAUCE
- 1 teaspoon FRESH GINGER, minced
- 1 teaspoon SESAME OIL
- 1/2 teaspoon CRUSHED RED PEPPER
- 1/2 teaspoon GARLIC, minced
- 2 cups CABBAGE, thinly sliced
- 1/2 cup CARROT, grated
- 1 can WATER CHESTNUTS, drained and chopped
- 1 cup CHICKEN BREASTS, cooked and diced
- 12 LETTUCE LEAVES
Instructions
- Place peanuts in a small nonstick skillet over medium-high heat; cook 3 minutes or until lightly browned, shaking pan frequently. Remove pan from heat; set aside. In a small bowl, combine hoisin, vinegar, soy sauce, ginger, oil, pepper and garlic in a small bowl, stirring well with a whisk. In a medium bowl, mix 2 Tablespoons peanuts, cabbage, carrots, water chestnuts, and chicken; add sauce and toss well. Spoon about 1/3 cup of chicken mixture in the center of each lettuce leaf; Sprinkle each lettuce wrap with remaining 1 Tablespoon peanuts. Serve immediately.
