Before Jonah started eating solid food I made the decision to make all of his baby food. It was a decision based on a desire to feed him the best food possible and also stretch our dollar as far as it would go. I used a wonderful site called, Wholesome Baby Food. It was full of information on each fruit and vegetable, what ages they are appropriate, and how to cook and combine them.
I continued the homemade baby food with Maddux for all of the same reasons. But for the most part I have always done individual fruits and veggies or simple combinations such as apples and carrots or bananas and avocados. When I came across this recipe at Annie’s Eats. Knowing that I had most of the ingredients on hand and an overflowing basil plant, I knew it was a must try. I will say that the first time Maddux ate it, he didn’t like it. I think that the texture was new and along with the new flavor combos it may have thrown him off. But after a few meals of serving it, he ate it without hesitation. It just goes to show that sometimes you have to offer a certain food to a child multiple times before they like it!

TOMATO, CAULIFLOWER, CARROT WITH BASIL
Ingredients
2 CARROTS, peeled and sliced
1 cup chopped CAULIFLOWER
2 Tablespoons unsalted BUTTER
2 medium TOMATOES, peeled, seeded and roughly chopped
2-3 fresh BASIL LEAVES
1/2 cup CHEESE (the recipe called for cheddar, we used an Italian blend)
Directions
Place the carrots in a small saucepan. Cover with water and bring to a boil. Reduce the heat to a simmer and cook, covered, for 10 minutes. Add the cauliflower and cook, covered, for 7-8 minutes more. Meanwhile, melt the butter in another pan over medium heat. Add the tomatoes to the butter and sauté until mushy. Remove from the heat and stir in the basil and cheese until melted. Puree the carrots and cauliflower with the tomato sauce and about 3 tablespoons of the cooking liquid.

My little guy has only been eating solids for about a month, now, but I’ve done all of his food so far. I’m definitely going to be remembering this one for when he gets a little older!

Thanks for the great recipe! I’ve also been using the Wholesome Baby Foods website for making Emma’s food since she was about 5 months old. Now she’s a year old, and even though she’s eating most everything we are, I still turn to their site for general questions and new spins on cooking basic foods. Love it!
