Today is the big reveal day for Secret Recipe Club‘s Group B. That’s the group I’m in! Am I excited? Just a little bit. My assignment for this month was Let’s Try These. Vivian is a wife, mom and grandma who really enjoys to cook and bake. On her blog, she challenges herself by being a part of The Daring Kitchen and a Monthly Cookie Carnival.
After looking through her blog, I can’t wait to try the Greek Penne Pasta with Chicken, the Chocolate Goody Bars sound downright sinful, I had been eyeing the Homemade Peanut Butter Cups, Chocolate Chip Strawberry Shortcake must.make.soon…I love the pretzels from the mall, so the idea of making my own is enticing and my kids would go crazy for these cute owl cupcakes. There were quite a few choices and, in the end, I chose the Chocolate Brownie Oatmeal Cookies.
I had heard of brownie cookies before, but I’d never tried to make any. The inside of this cookie is just like a fudgy little brownie…so stinkin’ good! I left out the nuts because I didn’t have any. Definitely, don’t forget the milk…it is necessary!
1 (8 oz.) block of CREAM CHEESE, softened
1/2 cup BUTTER, softened
1 cup firmly packed BROWN SUGAR
1/2 cup WHITE SUGAR
2 EGGS
1/2 teaspoon VANILLA
1 (12 oz.) bag of SEMI-SWEET CHOCOLATE CHIPS, melted*
1 1/2 cups FLOUR
1 1/2 teaspoons BAKING SODA
3 cups OATMEAL (regular or quick, uncooked)
1 cup CHOPPED NUTS (optional)
POWDERED SUGAR (optional)
In a large bowl, beat cream cheese and butter until smooth. Add sugars and beat until creamy. Add eggs and vanilla; beat well to combine.
Beat in melted chocolate. Add flour and baking soda; mix well. Stir in oatmeal and nuts (if using). Mix well. Cover and chill for at least an hour.
Preheat oven to 350°. Shape dough into 1-inch balls, place on cookie sheet* about 3 inches apart. Bake 8 to 10 minutes or until cookies are almost set. You do not want to over bake them.
Cool on cookie sheet for a minute or two, then remove to a wire rack to cool completely. Sprinkle with powdered sugar, if desired. Store in an airtight container.
*Notes: I melted my chocolate chips in the microwave, stirring every 30 seconds until smooth.
The original recipe suggests using an ungreased cookie sheet, parchment paper would make removing the cookies a lot easier.
