Green Smoothies….sounds interesting doesn’t it??? About a year ago I came across a recipe for a smoothie called the Green Monster from one of my favorite blogs. The ingredients sounded simple and it had the interesting twist of spinach in it. I admit at first I was hesitant to try a smoothie with spinach but soon learned that you couldn’t really taste the spinach but it added lots of nutrients. Around our house, we often have smoothies or shakes for a snack or sometimes for breakfast if we are running short on time. I am going to share my version of the green smoothie that is similar to the green monster but I have also added spinach to lots of other smoothies. Take your favorite smoothie ingredients and add a couple of handfuls of spinach before you blend. Delicious!
Green Smoothie
1 cup unsweetened vanilla almond milk (I use Almond Breeze)
1 banana
1 scoop protein powder (I use Vanilla Energy First Protein Powder)
1 cup ice (more or less depending on how thick you want it)
A heaping spoonful of peanut butter
A couple of handfuls of spinach
Add ingredients and blend until smooth. Enjoy!

i make a version of the “green monster” as well! when i first saw that post i knew it would be great way to sneak spinach into my little one’s diet! i can’t wait to try your version!
