Today I was thinking about how long it’s been since I’ve had bruschetta and how yummy it sounded. So, I decided to make it for dinner. I was looking online today to try and figure out the best way to make it, and then, I just decided I’d make it however I wanted! This is how it turned out…
I used…
4 Roma tomatoes, chopped and seeds taken out
6-8 fresh basil leaves, chopped
1/4 onion, chopped
Balsamic Vinaigrette
Salt and pepper to taste
Loaf of baguette bread
Preheat the oven to 450 degrees. (Make sure the top rack is close to the top.)
While the oven’s preheating, slice the bread diagonal about 1/2 inch thick. I sprayed my baking sheet with Pam Grill Spray, then placed the bread on it. Bake your bread for about 5-7 minutes, until it starts to get crispy.
In a bowl, mix the tomatoes, basil leaves and onion. Drizzle in balsamic vinaigrette. Add salt and pepper to taste.
When the bread is out of the oven, top with your mixture and it’s ready to serve.
We ate this for dinner, but, it would also be a perfect appetizer! This recipe made 15.
