We’ve been talking a lot about sides lately and this is one we tried at our house not too long ago. We had some zucchini so we decided to fry it.
We used:
2 zucchini, sliced thin
2 large egg, beaten
1 cup milk
1/2 cup flour
oil for frying
In bowl, mix eggs and milk. Dip slices in mixture then in flour. Heat oil in frying pan. Deep fry in the hot oil until both sides are golden brown. Remove and place on paper towel. Enjoy as a side with any main dish! (We ate ours just like this, but, I saw online that it tastes good dipped in tomato sauce.- Worth a try!)

oh this is wonderful! i have to tell you that they serve these Greek restaurants all over the city (NYC) and they all serve it with a garlic and potato dip — basically roasted garlic added to mash potatoes that are creamed to perfection (that means butter and cream added : ) LOL!!!! and i think a touch of cream cheese and then the roasted garlic — heavy on that and let me tell you it is outstanding!!! thought you might enjoy that : ) take care and thank you so much for sharing…i love it and to let you know that i continue to adapt many of your recipes to our vegetarian life style and it works wonderfully! hugs to you all!
