It is pretty rare that I come across a really good looking recipe when I am reading my FASHION magazines, but in the April 2011 issue of Glamour Magazine they had a recipe for Creamy Feta Shrimp Scampi. It sounds a little intimidating, but we love feta cheese and really enjoy seafood, so I put it on my must try list. I served it over spaghetti noodles, that I had tossed in olive oil and herbs after boiling. Overall, it was fairly easy to make and tasted delicious!
CREAMY FETA SHRIMP SCAMPI
Serves 4
Ingredients
1 Tablespoon UNSALTED BUTTER
1 Tablespoon EXTRA VIRGIN OLIVE OIL
3 GARLIC CLOVES, finely chopped
1/3 cup WHITE WINE
1/4 teaspoon KOSHER SALT
Pinch of RED PEPPER FLAKES
1 lb. large SHRIMP, peeled
2 ounces (1/2 cup) FETA CHEESE, crumbled
1 Tablespoon PARSLEY, chopped
1 Tablespoon freshly squeezed LEMON JUICE
Directions
Combine butter and oil in a large skillet over medium-high heat. When the butter is melted, add the garlic and cook, stirring until fragrant, about 1 minute. Add the wine, salt, and pepper flakes. Simmer the mixture until it is reduced by half, about 2 minutes.
Add shrimp and cook until almost opaque, 2 minutes. Crumble in feta. Then add parsley and lemon juice. Simmer, stirring until the cheese melts and the shrimp is cooked through, about 1 minute. SERVE AND ENJOY!
