One of my favorite desserts….Scotcheroos!!! I’ve never been much of a peanut butter fan, but ever since I was pregnant with my son, Kael, I’ve had an obsession with it. My mother in law makes these for me sometimes and Megan gave me the idea to post them.
Ingredients:
1 cup light corn syrup
1 cup sugar
1 cup peanut butter
6 cups Rice Krispies
1 cup chocolate chips
1 cup butterscotch chips
Spray 9×13 pan with cooking spray. Place corn syrup and sugar into large saucepan. Cook over medium heat, stirring frequently, until sugar dissolves and it begins to boil. Remove from heat. Stir in peanut butter. Mix well. Add rice krispies. Stir until well coated. Press mixture into 9×13 pan. Set aside.
Melt chocolate and butterscotch chips together in small pan over low heat, stirring constantly. Spread evenly over cereal mixture. Let stand until firm. Cut into bars when cool.
