That’s right…a ton of chocolate-y goodness mixed up in one bowl with a wooden spoon. One Bowl Chocolate Cupcakes are ridiculously easy and super delicious.
Once upon a time, my dear friend – the one who is a fan of super easy recipes – needed a batch of cupcakes to take the very next day to a group of students. I grabbed this recipe, she made them that night and they received rave reviews. It’s been quite a while since I even thought about those cupcakes. Well, the other day, I came across this recipe again and decided to make it immediately because one can only sit inside in sub-zero temps for so many days before chocolate becomes a necessity.
Oh.my.chocolate.goodness. These cupcakes are unbelievably perfect with mini chocolate chips in every single bite. And by perfect I mean, the texture, the lovely dome on top. And with only one bowl to wash when you’re finished, you’ll have cupcakes to share in no time at all! The frosting I made with these was sturdy enough to pipe on, if that doesn’t matter to you the frosting on these yellow cupcakes would be fabulous too.

- 1¾ cups FLOUR
- 1 cup BROWN SUGAR
- ¼ cup UNSWEETENED COCOA POWDER, sifted
- 1 teaspoon BAKING POWDER
- 1 teaspoon BAKING SODA
- ½ teaspoon SALT
- 1 cup MILK
- 1 EGG
- ⅓ cup VEGETABLE OIL
- 2 teaspoons VANILLA EXTRACT
- 1 cup MINI SEMI-SWEET CHOCOLATE CHIPS
- ½ cup BUTTER, room temperature
- ⅓ cup UNSWEETENED COCOA POWDER
- 2½ cups POWDERED SUGAR
- 2 Tablespoons MILK
- 2 teaspoons VANILLA EXTRACT
- Preheat oven to 350 degrees. Prepare a 12 count muffin tin with cupcake liners.
- In a mixing bowl, stir together flour, brown sugar, cocoa powder, baking powder, baking soda and salt.
- Measure 1 cup of milk in a 2 cup measuring cup, measure in ⅓ cup oil and add egg and vanilla. Whisk to combine and add to dry ingredients.
- Stir everything together until incorporated and fold in chocolate chips.
- Distribute batter evenly among cupcake liners, I used a standard ice cream scoop to do this. They will be pretty full.
- Bake 20-23 minutes or until a toothpick tests clean, be careful not to over bake.
- Frost cooled cupcakes as desired.
- Beat butter until smooth. Sift in cocoa powder and continue beating until combined. Add in half the powdered sugar, 1 Tablespoon of milk, remaining powder sugar and remaining milk with the vanilla. Beat on high speed until fluffy. Pipe onto cooled cupcakes. Add sprinkles soon after frosting if desired, this frosting firms up quickly.
