A restaurant that is in my top 10 favorite restaurants in Chipotle! I love the tacos, I love the burrito bowls, and of course I love the chips, salsa, and guacamole! I tried to recreate the burrito bowl a few times and failed! I could never catch all of the flavors that are in the original. Then my sister showed me a post on a blog called Iowa Girl Eats, which recreated perfectly. I made it exactly like she said the first time, then every time since then I have made my own little changes. I add corn and red onion with the beans, the seasonings also tend to change based on what I have on hand, and I ALWAYS add homemade guacamole! So feel free to make your own changes that better suite your family’s tastes!
There are four main parts of the burrito bowl: the rice, the beans, the meat, & the pico de gallo. Cook each one separately and then layer them in a bowl (or on a plate) and serve with chips or just eat with a fork!
RICE:
Cook brown rice according to the directions on the package.
When it is finished add the following ingredients:
-butter
-lime juice
-salt
-finely chopped cilantro
BEANS:
Drain and rinse a can of black beans. In a saucepan mix beans, a can of corn(drained), and finely chopped red onion. Season with cumin, chili powder, garlic salt, oregano, and onion powder. Cook until heated. NOTE: You will need some liquid in the pan while cooking. You can either use a splash of chicken broth or water.
CHICKEN:
This part leaves lots of room for interpretation… We use chicken breasts but if you would like a different meat such as pork or steak feel free to substitute. Also, you can cook the chicken in whatever way is easiest for you. We usually do it one of two ways. I either cut the chicken into small cubes, season it, and cook it in a skillet. Or I season it, cook it on the George Foreman grill, and then cut it into pieces (or shred it).
To season it, use spices such as:
-cumin
-chili powder
-cayenne pepper
-garlic powder
-onion powder
-oregano
PICO DE GALLO:
When I make things like Salsa, Pico de Gallo, or Guacamole I rarely measure the ingredients but instead go by taste. So for this pico, I list the ingredients that I use and you can decide what tastes best to you!

-red onion
-cilantro
-lime
-salt
