One of my family’s favorite things to do is entertain. I’m not talking about tablescapes, place settings and name tags – I mean everyday, anytime, pull out the paper plates kind of entertaining. We usually get together with friends every other week or so for dinner at one of our homes. The menu often includes an appetizer and more times than not it is made with cheese! The versatility of an 8 oz. block of cream cheese is amazing to me at times. You can make so many different things with it. I love using Philadelphia Cream Cheese as the starting point for a hot or cold creamy dip.
Since it’s summer and fresh corn and tomatoes are at their peak, it’s ideal to incorporate their fresh, sweet flavors into my favorite dishes. This easy dip comes together quickly and is full of flavor from sharp white cheddar cheese, sweet corn kernels, basil and, of course, bacon. Store in the refrigerator until you’re ready to serve and right before serving top with fresh chopped tomatoes. I like to serve this with crackers, bagel chips and fresh veggies. Dips like this one are perfect for entertaining any time of the year. Really, it’s time to pass the paper plates and enjoy a casual dinner with friends.
