Cool, creamy and delicious – Blueberry Lime Fool is so easy, you’re gonna love it!
I love, love, love a simple dessert that takes advantage of what you already have on hand in the fridge. We have picked more than our share of blueberries so far this season. There are so many ways to enjoy them and I’d never tried to make the English dessert called a fool, so I thought this would be a great time to try. To make a fool, you cook fresh fruit down to a sauce and fold it into fresh whipped cream. It’s not a pudding or a mousse, it is super amazing, not too sweet and just the right amount of tang from the added yogurt.

- 2 cups FRESH BLUEBERRIES
- 2 Tablespoons SUGAR
- 2 Tablespoons WATER
- 1 cup HEAVY WHIPPING CREAM
- 1 6 oz. container YOPLAIT KEY LIME PIE YOGURT
- In a small saucepan, combine blueberries, sugar and water. Bring to a boil and lower the heat to a simmer for about 5 minutes. Allow to cool completely.
- Whip cream until stiff peaks form. Fold in yogurt. Then gently fold in cooled blueberry mixture, you can leave it with streaks of color. Spoon into individual dishes or a bowl. Cover and refrigerate until serving.
