So, I’ve told you before that I make muffins on a regular basis….. a VERY regular basis. They are our go to breakfast/snack, especially when we’re in a hurry. I recently came across this recipe when I was searching for something to do with the bananas that were quickly browning on my kitchen counter. Something beyond the regular old banana bread or muffins. As good as they are, I was looking for something different. Then when I realized I already had a chocolate cake mix in my pantry it was a no brainer! Minimal ingredients and easy prep?! Yes please! Not as healthy as some of the other muffins we usually make and I’m sure you’re thinking…. a cake mix really?? So is it cake or muffin? I don’t really have the answer to that but I do know that they are deliciously great way to use up your brown bananas.
- 1 box CHOCOLATE CAKE MIX
- 2-3 large BANANAS, mashed
- 2 EGGS
- 1 cup CHOCOLATE CHIPS, divided in half
- Preheat oven to 350 degrees. Prepare a 12-cup muffin tin by spraying with cooking spray or lining with cupcake papers. After mashing bananas in a mixing bowl, add cake mix and eggs. Stir until completely moistened. Stir in half of the chocolate chips. Seperate equally into muffin tin. With the remaining chocolate chips, sprinkle a few on top of each muffin. Pressing down lightly to make sure they stay in place. Bake for 16-18 minutes. ENJOY!!
